Today I degassed my coffee bochet and measured the specific gravity. There is still absolutely no activity in the airlock. However, when I popped the top off my fermenting bucket, there were visible bubbles in the mead. It smells really boozy and you still get a light coffee aroma. The vanilla bean is floating on top and the seeds have spread a bunch of sediment around.
When I pulled the sample into the flask it looked like sewer water. If it clears up it might look more appetizing; it’s still pretty cloudy. The SG was 1.012 – fermenting nicely. That’s an ABV of approximately 11.55% at this point.
So for those keeping score at home:
- OG (8/19) = 1.10
- SG1 (8/23) = 1.070
- SG2 (8/25) = 1.034
- SG3 (8/29) = 1.012
ABV approx 11.55%
